Author: Michelle Geddio from Leesport, PA
The Recipe
Homemade Crust: Mix 1 ½ cups flour with ½ tsp. salt. Add ½ cup Crisco and mix with pastry blender until you have pea size pieces. Add 2 to 3 Tblspn of water (just one Tblspn at a time) until dough is moistened and can be formed into a ball. Roll out to 12” and then fold around rolling pin to place into pie pan.

Blueberry Filling: Combine 4 cups fresh blueberries with ¾ cup sugar, 3 Tblspn flour, ½ tsp. cinnamon, and a dash of salt. Put in pie shell and sprinkle with 1 tsp. lemon juice.

Crumb Topping: Mix together 1 cup flour, 1/3 cup sugar, 1 tsp. baking powder and 6 Tblspn of butter. Sprinkle on top of pie filling and BAKE at 400 for 35 to 40 minutes. Crumbs should be golden when pie is done.
